In our continued effort to make the Keto lifestyle more and more Yummy, we have come up with our own version of the Coconut Cream Cupcake!

What's great about the Cupcake is that it's quilt FREE. Indeed!
Low Calorie (yes i am one of those who like to counts my macros)
1/4 cup coconut flour
2 Tablespoons unsweetened shredded coconut
1/2 teaspoon baking powder
1/4 teaspoon salt
3 Tablespoons Ghee
1/4 cup powdered sweat leaf.I used sweat leaf because it's 0 carb. Feel free to use the one you're like.
1/4 teaspoon sweet leaf concentrated powder
3 large eggs
1/2 teaspoon sugar free vanilla extract
1/2 teaspoon coconut extract
2 Tablespoons unsweetened almond milk.
1/4 cup light coconut Milk
1 scoop of Perfect Keto Vanilla Collagen Powder
1/4 cup of grass fed butter
1/2 teaspoon vanilla
1/4 teaspoon xanthan gum
1/2 ounce plain cream cheese
2 Tablespoons powdered Sweat Leaf
Combine coconut flour, coconut, baking powder and salt in small bowl.
In large bowl, whisk together eggs, Swerve, Sweat Leaf, melted ghee, almond milk and all extract until you obtain a smooth paste.
Blend in dry mixture and place in the cupcake liners with a spoon.
Heat the coconut milk slowly. Add the liquid sweetener and ghee in the saucepan until you reach the boiling point then remove from the heat.
Stir in vanilla extract and xanthan gum. Leave it alone for a couple of hours.
Add cream cheese and Swerve. Beat with electric mixer until smooth.
Bake at 400 degrees F for 15-20 minutes until done.
And Voila!!!! Enjoy. You can also sparkle with pumpkin spice or Raw cocoa to taste.
Note: No matter which sweetener you used, watch out for hidden Carbs. The most popular one tend to have 1 or 2 grams per servings. Adds up pretty quickly!
